Toulouse’s most famous regional dish is cassoulet, a stew made with white beans, various kinds of meat and pork skin. La Cave au Cassoulet serves up a hearty portion that garners consistently rave reviews from both locals and tourists.

For an ultra trendy dining experience, foodies frequent Anges et Démons, equally popular for its exposed-brick minimalist chic and its offbeat offerings, like pink artichokes and back of rabbit.

Located on the banks of a canal-connected river, Toulouse is a city best viewed from its waterways. Off-season visitors enjoy boat tours along the Garonne, while summer guests can pass through the St. Pierre lock onto the Canal du Midi.

An aerospace powerhouse in Europe and the capital of the Midi-Pyrénées, Toulouse is also home to the Cité de l’Espace, the continent’s best space museum. The city centre boasts prestigious museums like the Musée Saint-Raymond and the Bemberg Foundation, as well as the Musée des Augustins, whose exhibits span centuries. This fabulous museum of fine art houses collections from Roman times to the 20^th century. The best rooms are reserved for the French masters, like Delacroix, Toulouse-Lautrec and Monet.
